How to Make Horseradish Cut the tops off the horseradish plant. The leaves look like mustard greens. They are not used at all. The roots are what the horseradish is made from. The leaves are discarded after cutting them off close to the ground. (NOTE: Bob runs his lawnmower over them to grind them up.) Dig the roots. You must dig deep to get most of the roots. Jun 5, 2012 - Bob's house in Milledgeville, IL

Friday, June 1, 2012 -- Before leaving Hickory Point COE we visited another Indian Mound and took pictures of the orioles nest. Look closely and you can see several eggs and part of the mother oriole. We arrived at Bob’s house in Milledgeville, IL around 11am. After sandwiches and a short visit with Earl, Gayle, and Bob, we started on the horseradish making project. Bob cut the tops (leaving some of the root on in order to replant it), Lowell dug, and Earl cleaned some of the dirt off and then put the roots in buckets of water to soak...
