We opted for the Gala New Year Degustation Dinner tonight in the Michelen rated restaurant, instead of a fondue in the lesser restaurant. We were asked to select our wines earlier in the day (to ensure they were "temperated"), from a massive wine List Tome. We had eight courses, with three additional Amuse Bouche dishes to start with, and three plates of chocolate delights to finish with.
