Ed & Marilyn 'The Happy Wanderers' travel blog

Once again we had to get up earlier than we would have liked. I had to take the truck to the dealer for an appointment at 8:00 AM. The “Check Engine” light was on and it turned out to be the Glow Plug Control Module. That took a good bite out of my credit card to the tune of $472.

Marilyn followed me in the car and we stopped to buy a few grocery items before returning home.

Back at the RV I managed to complete the paperwork to pre-qualify us to purchase a house. I then completed the FAA Medical form which has to be completed before I get my flight physical on May 10th. My friend Mike Mills will be pleased to hear that I may return to the sky, although it will be just for some fun in the future.

I put the printer away and started fixing some red beans and rice for lunch and dinner. Marilyn helped me chop the onion, green bell paper, and celery (Called the Holy Trinity in Cajun Country) and sautéed them in melted butter before adding chopped garlic, chopped tomatoes, chicken broth, and sliced Cajun Smoked Andouille Sausage. I brought that mixture to a boil and added Zatarains Red Beans & Rice. I simmered that for about 30 minutes and it was ready to serve. Marilyn ate two helpings and we are having the leftovers for dinner. It’s a bit spicy but we like the heat. I should say that I don’t measure things. I just add this and that and it usually comes out great.

Now it’s time for some of that good, spicy, red beans & rice for dinner. I think ice cream will make a great dessert tonight. Life is Good!
