Tuesday, Jan 31, 2017 Puerto Chiapas, Mexico & Mangrove Boat Tour
Today a tour is scheduled that Tom has been anticipating with excitement. We got up early to be ready for our exploration of the streams and mangroves along the coast of our first Mexican port. It was a relatively short bus ride to the start of the mangroves. The small boats had a capacity of only six (plus the boatman and the naturalist). The group split up and six boats headed down a narrow channel. The water is only a meter deep and the boatman poled us in silence along the twisty waterway. We were able to see birds including a Kingfisher, Blue Heron, Great Heron, Anhinga, Cormorant, Sandpipers, and Egrets. The birds were wonderful to see, but the mangroves themselves were just as interesting. The red and black mangroves live in the salt water and either filter the salinity out before absorbing the water, or exuding the salt on their branches. We were back in time for lunch, a restful afternoon and a sunset over the ocean.
We had our first “Chef’s Table” dinner which is a feature on Azamara. A small number of guests dine on a specialty menu prepared by the master chef. We were treated to the first-time offering of the “Pan American” menu. At least one of the ship’s officers attends this feast of six courses with wine parings chosen by the head sommelier. We had two officers and there were only 5 guests. It was a stupendous meal!
