|Marilyn & I started outdoors with our coffee when Jan walked over to tell us about something on TV that we wanted to watch, so we stayed indoors.
Marilyn fixed a nice breakfast with scrambled eggs, bacon, and toast and then we finished the chores and drove off to find the nearest Walmart. The Walmart we found had shaded parking which is much appreciated when the sun beats down out here.
When we returned to the RV I began fixing a large kettle of Gumbo, with andouille sausage, shrimp, and lots of onion, sweet red pepper, celery, and garlic. Yes there are many other spices and items in there too.
I can guarantee you that the aroma inside our RV would make your mouth water. We plan to eat the Gumbo tomorrow because it seems to get even better after sitting overnight.
I think Jan is fixing jambalaya for tomorrow so we’ll probably combine our dishes and enjoy a fine Cajun meal.
Just as I did in my “Stick & brick” days, I spent some time today paying bills and filing some paperwork in our fireproof safe.
Eddie & Jan joined Marilyn & I for a Happy Hour as we all sat outdoors enjoying the awesome weather, talking and laughing together.
We had decided to watch Battle Bots on TV tonight so we talked about that for a bit before breaking up and going inside to have some dinner.
Jan gave us some corned beef and German potatoes which we enjoyed. I had thought maybe we would try the Gumbo but now it is being saved for tomorrow.
