There are oyster farms from central California all the way up north to Eureka. There are probably even more north of us, but we have not gone into Crescent City, Ca. or southern Oregon yet. Oysters are like Martinis, there are a 1000 ways to serve them. You can eat them raw, you can bake them, put them in chowder, make oyster stew, and you can stuff a turkey with them. Then there are the things you can put on them raw in the half shell like Spinach, scallions, rice vinegar, hot sauce, horseradish, bacon bits, salmon eggs, etc. You can even BBQ the little guys! :-) There are two types of people in the world.....The ones that love oysters, and the ones that gag when they see one! It appears that when we visited the Oyster Festival in Arcata, California, the oyster lovers were there in the hundreds. Some people chew them, some people just swallow them, and others drop one in their beer and chug it down.
