Today is Staff Appreciation Day at FUMC and they are hosting a lunch after the Sunday service. I bought three bunches of asparagus to make marinated asparagus. I got up extra early and steamed the asparagus and made the homemade vinaigrette (1 c. oil, ¼ c. vinegar, 2 t. salt, 1 t. cracked black pepper, ¼ t. cayenne pepper, 1 t. paprika, 1 T. parsley, ½ t. dry mustard, 2 t. minced green pepper, 2 T. sweet pickle relish, and 1 T. chopped chives). I like to pour the vinaigrette over the hot asparagus so that it will maximally absorb the flavors. Asparagus done, shower taken and I was off to Sunday church.
We had such a nice service and delightful lunch afterwards. I enjoyed visiting with several friends during lunch. I had to make a quick exit to get to the park by 1:00 (Nature Center duty time). Almost all of my asparagus was eaten and several commented how good they thought that it was. My favorite dish of the lunch was a Greek salad dish (cucumbers, olives, feta cheese, capers, tomatoes, etc.); I hope that I can get the recipe. A close second was a pasta salad that had raw broccoli in it.
By the time I got back to the park, most everyone had left the camping area. I guess the threat of a thunderstorm made everyone get out extra early. The park is back to its quiet status. I only had one person come to the Nature Center. I worked on m Swedish weaving project. I need to get more of it done so Mary can check to make sure I am accurate in my understanding of the project. I only have two more Mondays to work with the Stitchers group.
After my Nature Center duty, I cleaned the stuff out of the freezer and refrigerator so I could defrost it. I haven’t had to defrost a refrigerator or freezer in years. I left it open for the accumulated ice to melt while I went to the park office to use the Internet to continue my work on a Student Guide for use during the self-guided field trips.
When I got back to the trailer, I used the hair dryer to speed up the defrosting of the refrigerator. While I was cleaning out the refrigerator, the rains came. Even though we had a flash flood watch, it did not rain very long.
