We arrived at Mom’s around 8:30 and shared breakfast with her. Afterwards, we took her to Walmart for a few items she wanted and a few things we needed. Came home and made sandwiches and then prepared smoked salmon dip, lemon-dill sauce and crab cakes to take to visit Lee and Jay at Matt & Sara’s lake home near Dahinda, IL.
What a beautiful home on Spoon Lake! It is a perfect place for lots of fun in the sun with all of their children and grandchildren. Our dinner was a fitting end to a great day. We enjoyed delicious Dungeness crab cakes; a super apple salad with cashews and Swiss cheese; great grilled green beans with apple-smoked bacon; and superb vegetable bread. The icing on the cake was dessert – a delectable Harvest apple crumb pie with caramel topping – oh yum! Our stomachs are complaining by now – but it sure was good!
We started home with a setting sun and were grateful to be camping close to Mom’s home tonight.
