(Elena Writing) It’s a good thing that we decided to stay home today. The campground is just about filled up with weekenders and the parking spaces at the visitors center were nearly all taken when we went to use the WiFi.
Ron caught up with some reading and I baked three new “light” recipes. I converted a blueberry muffin recipe into a cake, made Triple Chocolate Cookies, and Cinnamon-Spice Chocolate Brownies which has eight teaspoons of cayenne pepper however I thought it could use a bit more. I also added instant espresso to the latter recipes since I like the combination of chocolate and espresso. We were satisfied with the baked products.
Ron was reading in our campsite when a young gal stopped and offered some kettle corn she had just made. Who could refuse such an offer! Then he met and visited with Carl across the way.
The other day Ron met Dallas, our next door neighbor. While we were enjoying our campfire this afternoon Dallas came over and gave us a large cup of latte which his wife, Alice, had just made…yummy! In return I gave them some of the baked goods, then they, in turn, gave us couple beef fajitas! We had just finished dinner about half hour earlier but still managed to enjoy those delicious fajitas. Dallas and Alice are seriously considering full-time Rving. We enjoyed visiting with them this evening.
Since we’re leaving tomorrow, we shared our last strawberry longcake; no more food for us today!
We enjoyed another wonderful fun day in our retirement life!
