Today after getting up at 6:30am we took a 2 and a half hour drive over to the other coast of Florida where our daughter Tania, hubby Greg and our three grandkids live.
This time we drove through Kissimmee and St. Cloud, (as opposed to the toll road) it just made the trip a little more interesting. Of course it was interesting because Tony couldn’t resist stopping at Camping World in Kissimmee where he bought a very nice Coleman grill on a wheeled stand. It is Red (we have a red stripe down the side of our Alumascape Suites) ..... gotta be color co-ordinated :) It also run very hot 20,000 BTU's which is very important to us as we love to grill steaks medium/rare. This will give them a great grilled color on the outside and make them just right inside. We looked at the Weber Q which was a little less money but also the BTU's were 12,000 - not quite as hot. So we’re ready guys… for all our cookouts. Most of you know us ex-South Africans, outdoor grilling is a huge part of our lives.
We had a super day… spending time playing with Amy, Emily and baby Nathaniel. I just can’t believe he will be 1 year old on the 22nd of this month, of course we are very sorry that we will miss his party which we were scheduled to attend, but our family are very understanding and supportive, so we took him his birthday presents today and he had a ball playing with his new toys. Our little girls are just charming, they are both into gardening now… and have planted Sunflowers, Watermelon, Tomatoes and Strawberries. They tend to them each day, watering and weeding… it’s too cute.
Lunchtime Tania fixed a pasta dish and then an amazing chocolate cake/pudding served with ice cream.... she made this in the crock pot so I am going to share the recipe with you because it is an absolute keeper and fabulous to bring for a covered dish.
Decadent Chocolate Delight - CROCK POT
1 package chocolate cake mix
1 cup (8 oz) sour cream
1 cup chocolate chips
1 cup water
4 eggs
¾ cup vegetable oil
1 package instant chocolate pudding and pie filling mix (smaller size box)
Ice Cream (optional)
1. Spray inside of Crock Pot with cooking spray
2. Combine cake mix, sour cream, chips, water, eggs, oil and pudding mix in slow cooker, mix well.
3. Cook on HIGH for 1 hour and then on LOW for 2 hours, or until done.
Serve hot or warm with ice cream if desired.
Yes it's totally off the charts delicious with Vanilla ice Cream..... yumo.
After spending an awesome day we finally said our goodbyes and headed home.
We arrived home to an email from Tom at Storm Lake Campground saying that our background checks SHOULD come back tomorrow. Hopefully they will because now that Tony is ready to leave he like a racehorse ready to charge out of the stall. As soon as we receive clearance we're OFF!!!!!
If the background checks come through tomorrow as planned that will be our final day here in Tampa – we will pull out after breakfast on Friday.
