Jerry’s Father’s Day smoker finally arrived, it was a couple of days late for Father’s Day but he at least knew it was on the way. :-) Jerry and I put it together, we had to add the wheels and put a few things in place with screws. We started out cooking a couple of chickens, corn on the cob, bacon wrapped asparagus and potatoes. Everything was delicious except the potatoes. We learned they need more time in the smoker, we cooked them a bit more inside. The smoker is electric and it is awesome for meats. We are planning a pulled pork roast next. So many of our neighbors came by and smelled those chickens cooking, we promised a lot of neighbors plus the owner of the campground a pulled pork meal next time we cook. This thing does draw the crowds. :-)
Vickie also spotted a huge bull moose in the campground while we were cooking the chickens. Maybe he smelled the delicious food cooking too. We all enjoyed our first smoker meal much and can’t wait to do it again. Check back later for more from Rocky Mountain National Park.
Please Note: The Wi-Fi is on and off here, we have great service for a couple of hours or maybe even a day, then it goes out for two or three days. If you have tried to reach up by email, please know we will be in touch as soon as we leave the park and have better internet.
